Comforting Kimchi Stew

INGREDIENTS:

  • 8 cups kimchi

  • 8 cups bone broth (pork or beef)

  • 6 tablespoons mirin

  • 1 cup sliced rice cakes (optional)

  • 1 cup sliced scallions

Your Choice of Protein:

  • 1 lb beef stew meat

  • 1 lb pork or boar stew meat (leg, shoulder, or belly would also work well!)

  • 5 to 6 eggs, soft-boiled

Serve with rice (optional)

DIRECTIONS:

  1. Bring the bone broth and stew meat to simmer in a large pot, cook for 1.5-2 hours on low-medium heat or until meat is tender.

  2. Once meat is tender, add the kimchi and simmer for 5 to 6 minutes.

  3. Add the mirin. Taste the soup and adjust as needed, adding more mirin if necessary. When you've achieved the proper balance, add the rice cakes and soft-boiled eggs (if using) to the pot.

  4. Once the rice cakes and eggs are warmed through (about 30 to 60 seconds), portion the soup into bowls. Top each bowl with the scallions and serve immediately, with rice on the side.
